One Pan Sticky Sriracha Beef Fried Rice

This One Pan Sticky Sriracha Beef Fried Rice is the ultimate speedy dinner. Savoury beef mince is cooked with garlic, ginger and vegetables before being tossed with microwave rice (for quickness) in a sticky sweet spicy sriracha sauce. Served with a drizzle of creamy sriracha mayo and a side of garlic chilli broccoli, it’s packed with flavour but still quick enough for a busy weeknight.

Step 1

Start by heating a large non-stick frying pan or wok over medium-high heat. Add the sesame oil followed by the beef mince. Season with salt and black pepper and cook for 4–5 minutes, breaking the mince up with a spatula until browned.

Notes

If you prefer your broccoli softer, blanch it first. Bring a pan of salted water to the boil, add the tenderstem broccoli and cook for 1–2 minutes, then drain well. Add it to the pan with the garlic and chilli and cook for 1–2 minutes to finish.

Using microwave pouch rice straight from the packet works best because it’s slightly drier and fries well. Cooked leftover rice can also be used. Break it up before adding to the pan.

The beef mince can be swapped for turkey mince, chicken mince, plant-based mince. Cooking time stays the same.

Adjust the sriracha depending on your heat preference. For a milder version, start with 1 tbsp instead of 1½ tbsp.

You can easily add more veg if you like. Good options include peas, sweetcorn, diced peppers, shredded cabbage. Add them with the carrot.

If you don’t have dark soy sauce, replace it with extra light soy sauce. The colour will just be slightly lighter.

Regular broccoli florets can be used instead of tenderstem. They may need an extra minute or two to cook.

Fried rice works best on high heat in a wide pan or wok so the rice fries rather than steams. Tip: Use a large frying pan or wok so the rice can fry properly.
