Notes

For a higher protein recipe, you can use chicken or turkey sausages. For different flavours, you could add some smoked paprika and chorizo in to the mix. If you blend the cottage cheese you can't taste it but you can swap to Greek yoghurt to keep the creaminess if you prefer or even omit altogether just keep an eye on cooking time. Meal prep - Allow the frittatas to cool slightly before slicing them into portions. Once cool, divide the portions into meal prep containers. Store the frittata portions in airtight meal prep containers in the refrigerator. They will last up to 4 days. When ready to eat, simply reheat the frittata in the microwave for 1-2 minutes or until heated through. Enjoy it warm or at room temperature.

Can I freeze these ? I bought 1 litre of frozen egg whites 😱 so thought I’d make double batch

Definitely! Just make sure it completely cools prior to wrapping. Make sure to wrap it well in cling film or foil and then pop in a sandwich bag or an airtight container. Fully defrost and you could either pop in the oven for 10-15 mins at 180 degrees celscius or microwave (but id steer that option if best)
