Subs/Swaps/ Extras
Lamb or chicken mince works really well instead of beef mince. You can also use veggie mince.
Sweet potato works well instead of regular potatoes. Just make sure to cube larger than usual as they shrink!
Shop-bought pickled onions can be used for a quicker version.
Greek yogurt works well alongside or instead of hummus.
Flatbread, pittas or tortilla wraps all work well for the crispy shards.
Add crumbled feta for extra salty flavour.
Rocket or shredded lettuce can be added for extra freshness and volume.
Chickpeas or roasted aubergine work really well added for extra texture and fibre.

I added more harissa paste, and some mushrooms to the beef mince. Then added some chopped gherkins, balsamic, and feta to the salad as didn't have any lemon etc to hand. Delicious dish!

This was a fabulous summer dish and perfect al fresco dining. I forgot to buy potatoes so we had chips instead. And I dont do cucumber so flung in some avo instead.
