Chicken Kiev Inspired Mac & Cheese

This pasta is creamy and garlicky with a crunchy parmesan breadcrumb topping. The mac and cheese cooks directly in the pan so there's less washing up and it helps to thicken the sauce without using loads of cheese or having to make a roux. It's a super cosy dinner to snuggle up with.

Season the diced chicken with the garlic granules, dried parsley, salt and pepper. Heat a large deep non-stick pan over a medium-high heat and spray lightly with oil. Add the chicken and cook for 5–6 minutes, stirring occasionally, until golden and cooked through.

Notes

This mac takes a little longer because the pasta cooks directly in the stock and milk rather than being boiled separately, which is what creates the thicker sauce without loads of extra cheese. If it tightens up on standing simply stir through a splash of milk or stock over a low heat until loosened and creamy again. Equally, make sure to use a large enough pan so there is enough surface area for the pasta to cook. Finely chopped spinach or peas work really well stirred through in the final 2-3 minutes of cooking. For extra volume without changing the flavour, courgette grated on the coarse side of a box grater is good too.

I might genuinely be in love… this is the love child of the M&S best ever Mac and cheese and their chicken Kiev dip with about 4000 less calories 😍🤤 an absolute 100/10.
