This mac takes a little longer because the pasta cooks directly in the stock and milk rather than being boiled separately, which is what creates the thicker sauce without loads of extra cheese. If it tightens up on standing simply stir through a splash of milk or stock over a low heat until loosened and creamy again. Equally, make sure to use a large enough pan so there is enough surface area for the pasta to cook. Finely chopped spinach or peas work really well stirred through in the final 2-3 minutes of cooking. For extra volume without changing the flavour, courgette grated on the coarse side of a box grater is good too.
