You can use shop-bought flatbreads for a super speedy dinner. Deli Kitchen Greek-style flatbreads are usually among the lightest options and will reduce the overall calories. However, they may also slightly lower the protein compared to the homemade version. Simply skip the dough step and assemble as normal. Mozzarella gives the best melt and stretch. Avoid very wet fresh mozzarella as it can make the base soggy. You can add Jalapeños for extra heat. A sprinkle of cheddar with the mozzarella for sharper flavour.
