Notes

  • Broccoli: Only blanch it briefly and drain it extremely well. Any excess water can thin out the sauce once everything is mixed together.

  • Sauce consistency: Before transferring to the baking dish, the sauce should look creamy and cling to the chicken and broccoli. If it seems too loose, let it simmer a little longer over a slightly higher heat. Don't reduce it too far, though, as it will thicken further in the oven.

  • Potatoes: Microwaving them for a few minutes first gives them a head start so they can crisp up in roughly the same time that the bake finishes.

  • Cream cheese: Light cream cheese helps give the sauce body without needing loads of cream.
