Notes

I use Elmea Single Light reduced fat Alternative to cream in a lot of these recipes. If you do not want to use it, you can sub for half fat creme fraîche (60ml) or lightest cream cheese (60g) and increase the water as needed for the sauce. As always, if meal prepping this recipe ahead of time, ensure the food is completely cool before storing in an airtight container and popping in the fridge. This will keep up to 4 days. I recommend adding the potatoes to one half and the creamy chicken to the other half. Simply pop in the microwave for few minutes to reheat, adding a dash of water if needed to loosen the sauce. Tomatoes either sun-dried or cherry would also be a beautiful addition to the flavours in this dish.

Very tasty! Didn’t cut some of the potatoes small enough tho and they weren’t cooked through (my own fault!!!) apparently I find it very hard to cut potatoes into cubes 🤣🤣 sauce was scrumptious 😋
