Notes

The fats in this meal are all healthy fats, however if you are watching this macro, you can omit avocado and use egg white scrambled instead. Seasoning - for the fritters, I kept it simple with just smoked paprika, as the cheese does add extra flavour along with the other condiments. If you want to add extra flavour, you could add 1/2 tsp garlic granules and a pinch of oregano, alternatively for a bit of warmth cajun seasoning would also be delicious! Meal prep You can make the fritters ahead of time. Allow the fritters to cool to room temperature to prevent condensation. Place the fritters in a single layer in an airtight container. If stacking, separate layers with parchment paper. Keep in the fridge for up to 3 days. They will also keep in the freezer for up to 2 months. When reheating, warm in a pan over medium heat, in the oven at 180°C for 8–10 minutes, or in an air fryer for 5–7 minutes.
