Notes

You can swap the bacon for chicken or turkey sausage chopped If you would prefer to airfry your potatoes, you can pop them in for 20 minutes at 200 degrees. If you would prefer to oven bake them you can cook them for 30-35 minutes at the same temperature. Just season them before you pop them in. Make sure to always remove the eggs from heat just before they look done so they don't overcook. They will continue to cook after you remove them from heat. If meal prepping, I would add the avocado fresh or omit all together

This was very different for me but I really enjoyed it. Filling and clean. Full disclosure: I had to use Parma ham instead of bacon… I realise it looks like 2 pieces of raw bacon in the bowl but it’s not! Honest!
