For an extra bump of protein, you can use cottage cheese or Greek yoghurt. I didn’t use it for this recipe as I know not everyone is a fan and it can be tricky if you reheat. If you have the time, I recommend blending the cottage cheese first before stirring into the soup so that it incorporates better but you can just pop it in with the other ingredients. Start with 50g if you aren’t much for it and increase as needed to suit your palate. Likewise with Greek yoghurt. If reheating, always ensure it is low heat to avoid splitting. I also like mine a little chunky still, but you can blend on high or use a fine sieve to get out any extra bits you don't like.

Second time making this in a batch load. Had it for work lunches and enjoyed it so much I’ve made more. It had been my first time making soup. Super tasty and simple to make. I followed the recipe for 4 but got 6 portions out due to the size of my containers but it works perfectly for me.
