Homemade Roasted Tomato Soup

One of my all time favourite lunches is a tomato soup. I do recommend roasting your veg if you have time to bring out their natural sweetness although I have listed below a shortcut method if you prefer along with a way to boost protein. I like to have mine with a golden cheese toastie for dipping.

Second time making this in a batch load. Had it for work lunches and enjoyed it so much I’ve made more. It had been my first time making soup. Super tasty and simple to make. I followed the recipe for 4 but got 6 portions out due to the size of my containers but it works perfectly for me.
