Notes

This is veggie friendly if you use a veggie alternative to parmesan such as grana padano. Italian passata is usually thicker and more tomato-rich, which works best here as the pasta absorbs a lot of flavour while baking. Mutti, Cirio, Napolina or Tesco Finest are all great options. Fresh lasagne sheets: These cook much faster. Reduce the oven time to 20–25 minutes and reduce the hot water to around 150ml Par-boiled dried sheets: If you prefer, you can par-boil dried lasagne sheets for 4-5 minutes, then snap and add to the sauce. This reduces the oven time to 25–30 minutes and makes the pasta easier to separate.
