This recipe is forgiving so use any vegetables you like to pack it out. Use a variety of sized roast potatoes to achieve an equal topping. This will keep in the fridge for up to 4 days. Ensure the bake is completely cool prior to storing in an airtight container. Reheat in the microwave for 2-3 minutes depending on the wattage of your microwave, ensure it is piping to throughout.
