The roasting step helps concentrate the flavours and adds a gentle nuttiness but you can boil if you want to save some time.

Hello - if I wanted to swap this out to brocolli I’m guessing skip the roasting stage - but would I need to boil it?

Hi Mel, great idea to try broccoli! To ensure the broccoli is perfectly tender, just steam it lightly for 3–4 minutes instead of boiling. You'll avoid sogginess and get a lovely texture for your cheesy dish. x
