I use a Mandolin slicer to get super thin slices of potato. If slicing by hand, you may want to par boil or microwave on full power for 4-5 minutes before layering so that they cook quicker in the oven. You may also need more potato!

This didn't touch the sides, and there was enough for four decent portions: having it again tomorrow. The potatoes were al-dente, but leaving them in for maybe an extra 10 minutes before adding the cheese is probably all they need if you like them a bit softer.

Took a while to make this one but god was it worth it! I added a bit of hot perinaise on top instead of sour cream and it was unreal. Comfort food at its finest!
