This is a banging way to enjoy chilli night at home. It’s topped with thin slices of potato and baked until crispy with golden melted cheese. Perfect with a dollop of sour cream, guacamole and pico de gallo if you want some added freshness.

Notes

I use a Mandolin slicer to get super thin slices of potato. If slicing by hand, you may want to par boil or microwave on full power for 4-5 minutes before layering so that they cook quicker in the oven. You may also need more potato!

This didn't touch the sides, and there was enough for four decent portions: having it again tomorrow. The potatoes were al-dente, but leaving them in for maybe an extra 10 minutes before adding the cheese is probably all they need if you like them a bit softer.
