If you prefer, you can stir the cheese directly into the mix when adding the meat back into the pan. For a sharper taste, you can also grate in some parmesan. To speed things up, you can bake the pastry lid separately. Simply roll out the pastry, cut it to the desired shape, and bake it on a tray lined with baking paper. Brush it with egg wash as usual. To lighten it up, you could use filo pastry instead.
