There's nothing more comforting than a pie is there? This one is filled with chicken, chunks of ham and sliced leeks, topped with cheese and pastry before being baked until flaky and golden.

Start by adding the diced chicken to a large pan. Fry for 7-8 minutes until cooked through. Remove from the pan and set to one side.

Notes

If you prefer, you can stir the cheese directly into the mix when adding the meat back into the pan. For a sharper taste, you can also grate in some parmesan. To speed things up, you can bake the pastry lid separately. Simply roll out the pastry, cut it to the desired shape, and bake it on a tray lined with baking paper. Brush it with egg wash as usual. To lighten it up, you could use filo pastry instead.
