Boursin swap:
Light cream cheese + ½ tsp garlic and a pinch herbs. Alternatively, garlic and herb soft cheese or a roule work well.
For a richer sauce:
Add 1-2 tbsp light cream or extra Boursin
Veg Swaps:
You can swap the spinach for kale, diced red pepper or mushroom. Or leave out if you want it more indulgent

This pasta dish was super simple to make and was also really tasty! I swapped the mozzarella for a low fat high protein cheddar cheese and it worked really well. The chicken stays really succulent as it’s baked in the oven. Would definitely make again!

Really tasty, was approved by the whole family! Only thing was the chicken didn’t taste as juicy, was a bit firm, cooked in the air fryer. I will try cooking in the oven next time! Great recipes Alex, thank you 🤩

Oh no, sorry to hear that Carrie! The measurements are correct, but the consistency can vary depending on how much pasta water is added and how much the sauce is reduced. If you make again add the pasta water gradually and only using as much as needed to loosen the sauce. Hope you enjoyed the flavours and have better luck next time xx

My chicken did fall apart so definitely not as aesthetically pleasing! Very easy to make gf, used the light garlic cream cheese and less mozzarella for the size of the chicken breast! Absolutely delicious, super fresh.

This was lovely. Although I’m not sure if I used too much pasta water as my sauce went a bit runny so had to thicken it up with a bit more cream cheese and a dash of cornflour
