A low-faff peri peri pasta made with juicy chicken and a simple cream cheese sauce. It’s creamy, lightly spiced and comes together quickly using ingredients you’re likely to already have in. You can add a diced pepper, chopped spinach or grated courgette if you wish to bulk it out further.

Notes

You can add a diced pepper, chopped spinach or grated courgette if you wish to bulk it out further. I tend to use peri marinades as I find them less spicy than the sauces. This is mild to medium as written. Add extra peri-peri sauce or chilli flakes at the end if you like more heat. Reserve a little extra pasta water in case you want to loosen the sauce when tossing everything together. Mozzarella gives a mild, stretchy finish but you can swap for reduced-fat cheddar if you prefer a stronger flavour.
