Cheesy Honey Buffalo Chicken & Chorizo Rice

This dinner is an absolute banger and has SO much flavour. It's got a creamy spiced rice, topped with honey buffalo chicken, crispy, smoky chorizo and plenty of cheese for comfort.

Notes

Rice cooking Make sure the rice stays at a gentle simmer with the lid on lifting the lid too often can slow cooking. If it looks dry before fully cooked, just add a splash of water and carry on. Creaminess The cream cheese is optional but makes it much creamier and helps mellow the spice. If skipping, add a splash of extra stock or a little yoghurt at the end to loosen. Buffalo level Buffalo sauces vary a lot start with less and adjust to taste. You can always add more at the end. Chorizo Chorizo adds flavour but you can reduce the amount or skip entirely to lower calories just add a little extra seasoning or smoked paprika to compensate. Extra veg Easy one to bulk out add sweetcorn, peas or spinach into the rice towards the end. Cheese swap Mozzarella gives that melt, but cheddar or a mix works just as well. One pan option You can cook the chicken in the same pan after removing the rice, then add everything back together at the end if you want to save on washing up.
