Apple Cinnamon Pecan Breakfast Loaf

A warming, spiced apple loaf with sweet cinnamon, all spice and crunchy pecans running through every bite. Cosy, lightly sweet and full of autumn vibes, perfect for slow mornings or an afternoon pick-me-up and if you don’t fancy it as a loaf, you can easily use this recipe to make muffins!

Start by preheating the oven to 160 degrees Celsius (fan), 180 degrees Celsius (conventional). Line a 1lb (450g) loaf tin with baking paper and set to one side.

Notes

You can use all plain flour (200g total) if you prefer, the loaf will still bake perfectly. Using half oat flour adds a subtle nutty flavour, extra fibre (helps with feelings of fullness), and a softer, moister texture that keeps the loaf fresh for longer. Pecans add a lovely crunch and richness that balance the apple and cinnamon flavours plus they add some healthy fats for longer lasting energy. You can add 25g vanilla protein powder. If you add protein powder, reduce oat flour to 75g and use the 60ml milk. If the top browns too quickly, you can cover with foil. If making muffins, bake in liners and cook for 18-20 minutes.

Hi Lois! If you can’t find unsweetened applesauce, you could try making your own - just peel, core, and chop apples, then simmer with a little water until soft and blend smooth. If not, look for applesauce that's labeled "No Added Sugar" which works well, too. Hope that's helpful! 🍏
