Notes

  • Oat flour: You can use ready-made oat flour. If using regular rolled oats instead, blend them finely before making the batter.

  • Protein powder: The vanilla protein powder adds extra protein and sweetness, but you can leave it out. If omitting it, you may need slightly less milk, so start with around 160-170ml and add a little more if needed. You may also want to increase the sweetener or vanilla slightly to taste.

  • Sweetness: Adjust the honey or sweetener to taste, particularly depending on how sweet your protein powder is.

  • Raspberries: Frozen raspberries can go straight in from frozen there’s no need to defrost them first

  • Baking: The key is not to overbake them. Take them out when the centre is just set, as they’ll continue to firm up slightly as they cool.

  • Serving: These also work really well as smaller snack bars - simply cut into 8 pieces instead of 4. Each smaller bar is around 149 calories with 7.9g protein.
