Notes

For extra vegetables, add diced peppers, carrots, mangetout or sweetcorn to the fried rice.

If you prefer a spicier sauce, add a little sriracha or chilli flakes.

Microwave rice keeps this recipe quick and easy, but leftover cooked rice works well too. You can mix with 1/2 cauliflower rice if preferred to reduce the calories and carbs.

I got confused with the recipe instructions and put all the cornflour in the sauce. Added a ton of water at the end to try and save it, erm it was gloopy so yea wasn’t the best :( I know what to do next time but unfortunately the instructions were a bit confusing to me 😬😬

I thought I had peas in my freezer, but did not so I used some broccoli I had on hand. This is the best fried rice I have ever made! I don’t have instant rice, so I just made rice in my instant pot and let it cool while I made the rest of the recipe. I tried the chicken and WOW it was so good! This definitely kicks the takeout chinese food craving while staying healthy! We are healthcare workers so making fun and flavorful foods is important so we don’t order uber eats lol! We have a wedding coming up so I am excited to cook healthier recipes to look our best for our wedding day!
