Notes

Dress the rocket just before serving to prevent it wilting. For extra texture, add a small handful of toasted pine nuts or walnuts. If you prefer a milder flavour, mix the rocket with a handful of baby spinach. Toss through a handful of cherry tomatoes for sweetness and colour. Lemon balance: If your lemon is very large or sharp, start with a smaller squeeze and adjust to taste — you want the salad bright and fresh rather than overly acidic. Parmesan texture: Shaved parmesan works best here as it gives little salty bursts throughout the salad, but finely grated parmesan will also work if that’s what you have. Salt lightly: Parmesan is naturally salty, so add salt sparingly and adjust after tossing.
