You can swap the chicken breast for chicken thigh if you prefer a juicier result it works really well in the slow cooker.
If you don’t have chipotle paste, use a mix of smoked paprika, chilli flakes and a little hot sauce for a similar smoky heat.
Honey can be swapped for maple syrup depending on preference.
If you don’t have soy sauce, use a pinch of salt plus a splash of Worcestershire sauce for depth.
The chicken stock can be replaced with water, but stock gives a bit more flavour.
For the bowls, you can swap the rice for quinoa, couscous or even air-fried potatoes depending on what you fancy.
Sweetcorn can be swapped for black beans or kidney beans for a bit more substance. Or fresher items such as red pepper, red onion or cucumber.
If you want to keep it even lighter, skip the avocado or reduce the amount slightly.

Minimum effort needed but maximum taste! I left out the rice as fancied something lighter and it was lovely! Perfect meal for this warmer weather and the whole family loved it too!

Sorry about dodgy pic! Had already started scoffing it! Such a rich and warm flavour, subbed corn for mixed beans as didn’t have any sweetcorn! Just delicious!
