Step 1

Start by mixing the sausage meat with the smoked paprika, cumin, jalapeños, salt and pepper. Divide into 4 and shape into patties, pressing them slightly wider than the muffins. Using slightly damp hands makes this much easier.

Notes

You can use pork or turkey sausages instead of chicken if preferred, just adjust the calories accordingly.

If you don’t want to make the guac fresh, you can use a good quality shop-bought version, or just slice or lightly mash some avocado with salt and lime for a quicker option.

The chipotle salsa adds a smoky kick, but you can leave it out or just use regular salsa if you prefer it milder.

The egg layer is best cooked as a thin omelette-style sheet rather than scrambling it holds its shape better and reheats more cleanly. You can cook it in batches if needed.

You can swap English muffins for bagel thins, wraps or sandwich thins depending on what you’ve got.
