Speedy Creamy Cajun Cod & Rice

This is a quick one pan dinner packed with so much flavour. Cajun spiced cod fillets are served over a creamy cajun rice with garlic, onions and peppers. Using microwave rice keeps it fast and fuss free, making it perfect for busy weeknights when you still want something comforting and satisfying. You can swap to any white fish you prefer or even salmon works well here!

Notes

Cod can be subbed for haddock, pollock, hake or salmon all work well. Chicken Swap You can swap the cod for chicken if preferred. Use around 200g chicken breast (For 2 people) diced into bite-sized pieces, and cook for 6–8 minutes until golden and cooked through before removing from the pan. Dicing the chicken helps it cook quickly and absorb the Cajun flavour, keeping the dish just as speedy and flavour-packed. Crème fraîche can be swapped for cream or light cream cheese Microwave rice - 120g dry rice cooked separately. If you use frozen fish, it must be fully thawed and patted dry before cooking. Most Cajun seasoning has mild heat. If sensitive to spice, reduce the amount slightly.
