Notes

Subs

  • For a vegetarian version, swap the chicken skewers for 200g halloumi cut into thick strips or chunks. Season with the Cajun seasoning and cook until golden before drizzling with the honey glaze.

  • If you don't enjoy sweetcorn, try serving with cucumber, tomatoes or extra slaw instead.

  • Sweet potatoes can be swapped for regular potatoes if preferred. Cooking times may vary slightly depending on size.

  • The pickled red onions can be made up to 3 days in advance and stored in the fridge.

  • For extra vegetables and volume, serve with additional salad leaves, cucumber or sliced peppers.

Nutrition
To make this lower cal:

  • Skip the ranch drizzle and enjoy the plate with just the ranch slaw. You'll still get plenty of creaminess and flavour while saving a few calories.

  • Reduce the sweet potato portion slightly and add extra salad leaves, cucumber or peppers to keep the volume high
