Stock: I used 1 whole chicken stock cube to make the 100ml stock as I wanted plenty of flavour. Stock cubes can vary in saltiness, so you may prefer to use less. Taste the finished sauce before adding any extra salt.
Mash: I like to use a potato ricer I grabbed on Amazon for ease and for the smoothest mash although a regular masher works too. For an even speedier dinner, you can buy mashed potato ready made!
Cream cheese: The light cream cheese adds extra creaminess and helps thicken the sauce. If you'd prefer you can use all single cream or all cream cheese.
