Speedy version
For a quicker version, get the rice started first, then cook the chicken and chorizo in a separate pan while it simmers. This saves around 10 minutes and still gives you all the flavour from cooking the rice in the tomato stock.
You can use a 250g pouch of microwave long grain rice if you prefer. Cook the peppers, onions, tomatoes and tomato purée as directed, then stir through the cooked rice with a splash of chicken stock until heated through. It won't have quite as much flavour as cooking the rice in the tomato stock, but it's a great time-saving option
