Notes

Chicken
Boneless skinless chicken thighs give the best juicy gyro style texture and stay more tender after slow cooking. Chicken breast can be used instead if preferred, but it will be slightly leaner and less juicy. If using breast, reduce the cooking time slightly to avoid it drying out. Crisping the chicken after slow cooking gives the best authentic kebab-shop style finish but you can skip this if preferred.

Pickled Onions
To make quick pickled red onions, thinly slice the onion and mix with a pinch of salt, a splash of red wine vinegar and a squeeze of lemon juice. Leave for 15-20 minutes to soften and pickle slightly.
