If you like your noodles extra saucy, add an extra 1 tbsp dark soy sauce, 1 tbsp sweet chilli sauce and 1 tsp sriracha directly to the noodles when tossing everything together (for 2). The recipe as written lightly coats the noodles, but this creates a more sauce heavy takeaway style finish.
For extra vegetables, add sliced peppers or shredded carrots alongside the onion.
