Mix the chicken with all the spices, salt, pepper, lemon juice and Greek yoghurt until evenly coated. For best flavour, cover and marinate in the fridge for at least 20-30 minutes. If you have more time, up to 4 hours will deepen the flavour further. If short on time, you can cook it immediately.

Notes

Sumac is a deep red spice commonly used in Middle Eastern cooking. It has a bright, lemony flavour that adds sharpness and freshness without heat. It’s what gives the onions that slightly tangy, takeaway style flavour and helps to cut through the garlic sauce and cheese within the wrap. If you don’t have sumac, you can substitute with: • Extra lemon juice • A small splash of red wine vinegar • Or simply leave it out and have The flavour will still be delicious however sumac just adds that authentic edge.
