If you can't get sundried tomatoes, use fresh cherry tomatoes. If you sub them, season the sauce with a tsp of smoked paprika and 1/2 tsp dried oregano to compensate the flavours lost.

This meal was absolutely delicious. We added to our side with long stem broccoli, rocket salad and sweet pepper (no I didn't manage to fit it all in) 10/10 and my partner said it was better than a restaurant 🤣 thanks for making me a good chef 🤣
