Fresh gnocchi works best here as it softens nicely in the sauce, but if you’re using cupboard gnocchi, boil it first according to pack instructions before adding it to the pan.
You can swap the spinach for other greens like kale (finely chopped) or even stir through peas at the end for something a bit different.
For extra veg, mushrooms, courgette or roasted peppers all work really well in this just cook them off with the chicken or soften them before adding the sauce.
If you don’t have red pesto, green pesto will work too, it’ll just give a slightly different flavour.
You can swap the chicken for turkey mince or even keep it veggie by using roasted veg or a meat-free alternative.

Insanely good, I will make this again and again. I’m not normally a gnocchi fan but this changed the game. Delicious

Absolutely delicious. Probably could have added a bit more pesto but wonderful none the less. Definitely one to make again.

I can’t have pesto due to a nut allergy (and can’t find a nut free one!) - would a sundried tomato paste work instead?
