Honey Chipotle Chicken Fajita Traybake

Subs

  • The black beans add extra fibre and volume, helping to keep you fuller for longer. You can sub them with red kidney beans or pinto beans if you prefer. Alternatively, sweetcorn can be used instead of the black beans, or use a combination of both for extra volume.

  • Avocado works well added on top if you have some to use up.

  • The fajita mixture can also be served over rice or loaded into burrito bowls if you prefer. It's also tasty just over a salad!

  • For extra volume, add sliced mushrooms, courgette or extra peppers to the tray before baking.

  • To save time, swap the homemade pico de gallo for a shop bought tomato salsa. It's a great shortcut for busy weeknights.
