Ingredients: 250 g Chicken breast fillets; 1 pinch Salt; 1 pinch Pepper; 50 g Egg white; 30 g Cornflour; 1 Boil in the bag long grain rice; 1 small Red pepper; 1 small Green pepper; 1 small Onion; 1 tsp Chopped garlic; 1 tsp Chopped ginger; 60 g Pineapple chunks; 2 Spring onion; 1 tsp Sesame seeds; 100 ml Pineapple juice; 3 tbsp Reduced sugar ketchup; 1 tbsp Light soy sauce; 1 1/2 tbsp Dark soy sauce; 1 tbsp White vinegar; 1 tsp Sugar

Chunky chicken pieces are coated in a light, crispy batter, then tossed in a banging sweet and sour sauce with peppers, onion and pineapple. It’s a takeaway favourite made light and simple at home.

Notes

If you have problems with your sauce thickening, you can pour in a cornflour slurry made up of 1 tsp cornflour mixed with 1 tbsp water. Pineapple chunks are optional in this recipe! So if you don't like them don't add them. Don't skip the sugar, it helps the sauce to caramelise. For an even lighter dinner (or for lower carbs), skip the crispy coating and just use diced chicken.
