Notes

The tortillas will soften as they bake and absorb the pizza sauce. For the best texture, leave a few tortilla corners exposed on top so they crisp up in the oven.

Any standard flour tortillas will work. Smaller tortillas can be used if that's what you have, simply tear them into bite-sized pieces. This recipe is also perfect for any stale wraps you have lurking!

For extra vegetables, add sliced mushrooms, diced courgette or sweetcorn along with the peppers and onions.

For a spicy version, add chilli flakes to the sauce or finish with hot honey before serving.

Allow the bake to rest for 5 minutes before serving. This helps the sauce thicken slightly and makes it easier
