Heat a frying pan over a medium to low heat and lightly spray with oil. Add the sliced onion with the sugar (if using) and a pinch of salt. Cook for 20-25 minutes, stirring regularly, until soft, golden and caramelised. If the onions start to catch, add a splash of water and continue cooking.
