Butter Chicken with Dirty Rice

This has got to be my all time favourite fakeaway and I guarantee you’re gonna love it. It’s a lighter take on butter chicken that’s got spiced marinated chicken pieces, a delicious creamy butter sauce served with golden dirty rice. The ingredients list does look intimidating but I promise it’s super easy to make and mostly made up of spices!

In a bowl, season the chicken with garam masala, paprika, curry powder, cumin, salt, and pepper. Add the chopped garlic along with the yoghurt. Stir to coat, and set aside to marinate while you start the rice.

Could I make the curry in a slow cooker?

Hi Toni! Absolutely, you can cook the curry sauce and chicken together in a slow cooker. I suggest after sautéing the onions, garlic, and spices, transfer everything including pre-seared chicken to the slow cooker and cook on low for 4–6 hours. You might not even need stock; the slow release of juices should be plenty. Just stir in the cream towards the end to avoid any splitting. Enjoy!
