Mini Egg Hot Cross Bun French Toast

This is a cosy Easter inspired breakfast, brunch or even a cheeky pud if you fancy it. Soft hot cross buns are soaked in a egg mixture and pan-fried until golden, then topped with creamy yoghurt, fresh berries and crushed Mini Eggs for a fun seasonal finish.

Notes

If you’d prefer not to use protein powder, simply leave it out and add an extra 1 tablespoon of milk to the egg mixture instead. If your protein powder doesn’t mix easily, first stir it into the milk to form a smooth paste, then whisk it together with the egg, cinnamon and honey. Any flavour of hot cross bun works well here. Traditional, chocolate chip or triple chocolate all work just use your favourite. Hot cross buns are quite soft, so only dip them briefly in the egg mixture to prevent them becoming soggy. Cooking on a medium heat allows the custard to cook through while the outside turns golden and lightly crisp. Frozen raspberries work perfectly here and will gently soften on the warm French toast.
