Notes

Subs & Swaps
You can swap celery for spring onion, finely diced cucumber or red onion works nicely in the potato salad
Swap red leicester for cheddar or mozzarella
Add jalapeños or pickles for extra tang and crunch

I used light mayonnaise here for a bit more flavour, you can use lighter which will reduce calories along with using reduced fat cheddar. Sour cream is also another delicious sub for this.
