Notes

Subs:
Black beans can be swapped for kidney beans or mixed beans depending on what you have in the cupboard.
Sweetcorn doesn't have to be charred, but cooking it briefly in the pan adds extra flavour.
If you don't have chipotle paste, use an extra ½ tsp smoked paprika and a few drops of hot sauce in the dressing instead. Avocado adds creaminess, but diced cucumber works well if you prefer something fresher or want to reduce the calories slightly.
Feta can be used instead of cheddar for a slightly saltier flavour.
