Notes

Gochujang pastes can vary quite a lot in strength and heat. I use an authentic Korean gochujang, which is quite concentrated, so a little goes a long way. If using a milder supermarket version, you may want to add a little more or equally, reduce the amount if yours is particularly spicy. Taste and adjust to suit.

Swap the Red Leicester for reduced fat cheddar or mozzarella if preferred.

Add sliced cucumber or shredded lettuce for extra freshness and crunch.
