Start by cooking the pasta in salted water until just underdone (about 1–2 minutes less than packet instructions). Before draining, reserve a mug of the pasta water, then drain and set aside.

Subs
You can swap the beef mince for chicken or turkey mince if preferred, or use a meat-free alternative to keep it vegetarian. Any pasta shape works here, but short shapes like penne or fusilli hold the sauce best.
BBQ sauces vary quite a lot in sweetness and smokiness, so taste the sauce before baking and adjust if needed. You can reduce the BBQ sauce slightly or use a lighter version to bring calories down.

Feel free to bulk it out with extra veg like sweetcorn, mushrooms or spinach for more volume. If you don’t have Red Leicester, just use all cheddar or a mix of cheeses you have.

Tip
Make sure the pasta is slightly undercooked before baking so it doesn’t go too soft, and keep the sauce a little looser than you think as it will thicken up in the oven.
