Step 1
Add the raspberries, honey and lemon juice to a small microwave safe bowl. Microwave until the raspberries are soft and beginning to break down, then mash well with a fork. Stir through the chia seeds and leave to stand for around 15 minutes, until the mixture has thickened into a quick raspberry chia jam.

Raspberries: Fresh or frozen raspberries will work. Frozen berries may need slightly longer in the microwave and can release a little more liquid.
Protein powder: Vanilla whey works particularly well, but use your favourite flavour or leave it out if preferred. If yours tends to go grainy when mixed directly into thick yoghurt, smoothing it with a little warm water or milk first makes it much easier to incorporate.
Greek yoghurt: I use a thick fat free Greek yoghurt such as Fage. Vanilla Skyr would also work if you prefer something a little sweeter and less tart.
Honey: Maple syrup or your preferred liquid sweetener can be used instead.
Seeds: Use any mixed seeds you have pumpkin, sunflower, linseed or additional chia seeds would all work.
