A chorizo, tomato and cheese omelette, is topped with a homemade chicken patty and drizzled with a touch of hot honey for the ultimate bite. I've listed below how to make them lighter for breakfast

Notes

This recipe is perfect for a weekend brunch, but if you fancy making them lighter or for breakfast you can make the below changes: Eggs - sub the two eggs for a further 90g of egg white to make a whole egg white omelette. This will also boost the protein! Chorizo - is added here for a burst of extra flavour, but naturally this adds to the overall fat content, so you can leave this out and add 1/2 tsp smoked paprika and 1/2 tsp garlic granules to the omelette to add extra flavour. Reduced fat salad cheese - you can use it either in the omelette, or leave to just crumble on top and use 1/2 of the amount Brioche buns - you could sub these for English muffins.
