You can swap for chicken breast or thigh if you don't like fish Feel free to remove the salmon skin prior to frying if you don't like it. I find cooking with it on helps it to peel off more easier than trying to skin it with a knife. Alternatively, you can pour boiling water over the fillet and after a few seconds the skin should come right off.
