I used day old rice as I find this works best in these dishes, if you haven't got day old rice, be sure to cook this first and rinse in cold water after cooking before combining in the pan.

Any steamed greens such as pak choi or broccoli on the side are also nice. I tend to have some prawn crackers too. You can bulk out the rice further with peas if you wish.
