White sauce: Cheese spread such as Dairylea or Philadelphia can be used instead of the white sauce if preferred. You may need to loosen it with a small splash of milk so it's easier to spread, particularly for the layer on top.
Cheese: The cheddar and mozzarella mix gives you plenty of flavour with a good cheese pull. You can use all cheddar if preferred.
Make it lighter: The bloomer bread I used was relatively low in calories per slice. If using a different bread, I'd recommend choosing a medium sliced loaf rather than thick cut bread.
