Step 1

Heat a large, deep non stick frying pan over a medium heat. Add the bacon lardons and cook for 5-6 minutes, stirring occasionally, until golden and crispy. Remove with a slotted spoon and set aside, leaving the bacon fat in the pan.

Notes

  • Smoked streaky bacon can be used instead of bacon lardons.

  • If the sauce becomes too thick, loosen it with a splash of milk.

  • Add baby spinach or peas during the final few minutes for extra vegetables.

  • Swap the mozzarella for extra Cheddar if preferred.

 💡 One pan tip: If you'd rather save on washing up, cook the chicken in the same pan after the bacon. Remove and set aside, then continue with the onions before adding the pasta. This will make it longer though.
