This recipe is really flexible. You can swap the chicken breast for chicken thighs, chicken sausages or chicken mince, cooking until golden before adding the veg. Feel free to bulk it out with mushrooms, courgette or sweetcorn added to the pan with the peppers. If you want extra depth, a spoon of tomato purée, a pinch of smoked paprika or a squeeze of lime juice works well, and chilli flakes are great if you like a bit of heat. Greek-style yoghurt can be swapped for sour cream or reduced-fat crème fraîche if preferred.

Really enjoyed this!! Used some halloumi I had in the fridge (prob wouldn’t again) and I ate all my Greek yoghurt for breakfast this morning 🤭 but really easy and so tasty!
